Cookbook Giveaway!
Pam Anderson was kind enough to send me a copy of Cook Without A Book:Meatless Meals. I already have a copy (see my review here), so we're having a giveaway!
To enter the giveaway, leave a comment (in the giveaway post on my blog) with your favorite meatless meal.
*For me, meatless meals are rice and beans. Cajun red beans and rice, Cuban black beans and rice, Indian lentils and rice...I'm using Pam's book to spread my (vegetarian) wings.
The Fine Print:
One entry per person, and please make sure there is some way I can get in touch with you through the comment. (In other words...no anonymous comments, unless you identify yourself in the text of the comment.) The comment has to be in this post on DadCooksDinner.com; emails, entries on my Facebook page, retweets, and notes wrapped around bricks and thrown through my window will not be considered for the drawing. Only entries from North America will be accepted.
Entries will be closed at 9PM EST on Sunday, January 15th, and I will randomly select the winner at that point. The winner will be announced Sunday. If I am unable to contact the winner by Wednesday the 18th, I will pick a new winner. Good luck!

Wow, I am wanting all the recipes in the comments! At our house, the favorites are either sweet potato/black bean burritos or a sweet pototo/chickpea stew with peanut sauce.

Just had one of our favorite vegetarian dinners last night: Black Bean Risotto made with beer. Lots of flavor, and very flexible.

My favorite meatless meal is the Tamale Pie from the Moosewood low fat favorites cookbook. My husband's favorite is the grilled ratatouille from Chef Kathleen's cookbook. Thankfully, the teenager has just begun eating these, so they now meet my 3-out-of-5-of-us standard for choosing meals. (Just found your blog and love it. My green beans now rock.)

My favorite meatless meal is Aloo Gobi Motar - cauliflower, potatoes and peas in an Indian-style curry. My husband and son (both confirmed meat eaters) and my vegan mother all love this meal.
