  So…they can’t all be gems. I promised a couple of pressure cooker cheesecakes for a friend’s dinner party…which is tonight. I’m rushing around, trying to get them cooking before I have to take my daughter to an 8AM band ensemble tryout. (Not enough coffee – that’s it! That’s my excuse.) They have to rest in the refrigerator, the longer the better, so I want them done as soon as I get home. I make a double batch of cheesecake batter, split it into two springform pans, and wrap both in foil. One goes in Instant Pot #1, I lock the lid, and set it for 35 minutes. I lower the other one in my second Instant Pot…and rush off, without actually starting the pressure cooker. I didn’t even close the lid – I just walked out the door. That way it was sitting there, lid open, so I can see it when I come 2 hours later. Now, am I going to let this stop me? No, of course not. I don’t even check it – I just lock the lid and start up the pressure cooker. It’ll be fine…everything’s …

The other day, my friend Judy said that Fall is the real start of the new year. “That’s it!”. She’s absolutely right – I think it’s the rhythm of the school year – but I always treat Fall as when I start new projects. (New Years Resolutions are for when those projects aren’t going so well…but that’s another story.) So, it’s appropriate that my blog anniversary is in late August. Specifically, August 20th, 2008. DadCooksDinner started when I posted a recipe (and I use the term “recipe” loosely) for Chipotle en Adobo Puree. It’s 2017 now – holy cow – and I’ve been writing here for 9 years. Recipe testing for my pressure cooker. When I heard about Pressure Cooker Cheesecake, I thought “That’s crazy”. I was wrong – it worked better than any other cheesecake I’ve made. And now, here I am, trying pressure cooker bundt cake. More news to follow… (If you’re way ahead of me, here’s the 6 cup bundt pan that juuust barely fits in the Instant Pot: NordicWare 6-Cup Bundt Pan. Cut a bundt cake recipe in half and it will fit.)
