PicOfTheWeek: Lots of Garlic

A big pile of garlic

I’m making Chicken with 40 Cloves of Garlic for dinner tonight. Peeling a few cloves of garlic? No problem. Peeling the 3 heads of garlic it would take for this recipe? I don’t have that kind of patience. That’s when I turn to the pre-peeled garlic in my grocery store. It’s in the refrigerated section, and not the abomination that is the pre-minced garlic. I can occasionally find it with strips of shrink wrapped individual cloves at Asian markets – but the clamshell full of garlic at my local grocery store works just fine. (Just don’t let these cloves sit around – keep them refrigerated, and use them quickly, because they go bad quickly.)

If you like garlic that much, you should try Chicken Garlic Straciatella soup. It is GREAT! From Mr Sundays Soups.

    • I’ve tried that. (I was going to mention it in the post, but I forgot.) It sorta works – I wind up having to peel a third to half the garlic by hand, depending on how “sticky” the peels are on that head of garlic. I’d rather spend the extra couple of bucks and get it pre-peeled.

Do you cook the Chicken with 40 Cloves of Garlic in the pressure cooker? If yes, can you share the method? Thanks!

You can keep the peeled garlic cloves in olive oil, in the fridge. It keeps much longer.
Also, there is a rubber tube by Zyliss which will peel your cloves in no time.
