Throwback: Chicken Alfredo

With all the kids at home, I’m racking my brain for weeknight one-pot meals. Instant Pot Chicken Alfredo was a hit this week, so I’m bringing it out of the archive to share with everyone.

Of course, it shouldn’t have taken this long for me to remember it – my oldest son has been asking for it since he came home from college. It’s a simple, one-pot pressure cooked pasta, where the only tricky part is finding fettuccine nests in the picked-over pasta section at my local grocery store.
