Throwback Thursday: A Whole Chicken in the Pot

But my favorite remained the basic roast chicken. What a deceptively simple dish. I had come to believe that one can judge the quality of a cook by his or her roast chicken.

In Julia’s honor, here’s my deceptively simple chicken in a pot. (And to head off a few commenters: I know, I know, this is not roast chicken, but I couldn’t skip over that Julia Child quote – it’s too good, too true, too right. This is a pot roasted chicken, pressure cooker style, which is its own kind of classic.)
