
Healthy eating has taken a back seat during this long stay at home. My wife and kids are baking for entertainment, and I’m sure not helping, working on recipes like Monday’s Mini Cheesecakes.
Not that there’s anything wrong with a baked treat, or taking refuge in comfort food. Far from it - it’s one of the things keeping me sane. But every now and again, I feel guilty, and start looking for something healthy…like whole grain brown rice.
Brown rice is a pain to cook if you don’t have an Instant Pot or other pressure cooker. Pressure cooking makes short work of brown rice, and you can have this side dish ready in about 40 minutes. And, hey, maybe it will let me squeeze in one of those shortbread cookies they’re baking right now…
