Throwback Thursday: Frozen Cheesecake

I made a bunch of pressure cooker cheesecakes for a graduation party in June, had an extra that no one touched, and stashed it away in the freezer…where it sat, and sat, and sat…until I saw it over the weekend and said “we really need to eat that.”

Cheesecakes freeze wonderfully. How do I know? Over the weekend, I pulled out a cheesecake that was left over from a graduation party back in June – so, about 3 months in the freezer – and let it thaw in the refrigerator overnight. I couldn’t tell the difference between it and a fresh-made cheesecake. So, if you need to make your dessert way, way ahead of time, freeze a cheesecake!
