We do a lot of outdoor cooking on our summer vacation. There’s something about a shorefront cottage and outdoor cooking...but I want to fancy it up a bit, impress my family. Enter Paella, Spain’s rice dish cooked over an open fire. (Or in my case, an open Weber Kettle.) I sell it as chicken and rice to my younger nieces and nephews. I skipped the mussels, and scraped the shrimp off of "their side" of the pan before they dig in.
Yes, I know, it's a little odd, bringing Spain's national dish to the shores of Lake Erie. It works for me, though!
