I’ve made real-deal Mole Oaxaqueño before - one of my favorite trips was to a cooking school in Oaxaca, Mexico - and this is definitely not that. I’m taking a shortcut and using a jar of store-bought Mole paste. For a weeknight Taco Tuesday meal, it’s plenty good.
(From what I could see, lots of Oaxacan home cooks take the same shortcut - there were multiple stalls in the market dedicated to selling different Mole pastes.)
