Description
Instant Pot Large Lima Beans, aka Southern Butter Beans, are a quick and easy way to pressure cook dry beans. The lima beans are ready in about an hour, with only 20 minutes of cooking at high pressure.
Ingredients
- 1 pound dried large lima beans, sorted and rinsed
- 6 cups water
- 1 teaspoon fine sea salt
- 1 smoked ham hock (optional)
- ½ teaspoon fresh ground black pepper (optional)
Instructions
- Beans and hock into the pot: Stir the sorted and rinsed dry large lima beans, water, and salt into an Instant Pot or other pressure cooker. Add the ham hock.
- Pressure cook the large lima beans for 20 minutes with a Natural Release: Lock the lid and cook on high pressure for 20 minutes in an Instant Pot or other electric pressure cooker (use Manual, Pressure Cook, or Pressure Cook - Custom mode in an Instant Pot), or for 18 minutes in a stove-top pressure cooker. Let the pressure come down naturally, which will take about 20 minutes or more. (You can quick release any remaining pressure after 15 minutes if you are in a hurry.)
- Serve: Unlock the lid and discard the ham hock. Stir in the ½ teaspoon of fresh ground pepper (optional), serve the beans, and enjoy!
