Description

A chunky homemade blue cheese dressing - great on a salad with a juicy steak, or with chicken wings.

Ingredients

Scale
  • 2 tablespoons white wine vinegar
  • Pinch of salt
  • Pinch of freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup mayonnaise
  • 1/2 cup crumbled blue cheese
  • 10 ounce bag of romaine lettuce (about 3 quarts), for serving

Instructions

  1. Dissolve the salt: Whisk the salt, pepper and vinegar in a small bowl until the salt dissolves, about 10 seconds.
  2. Add the oil: Add the olive oil, and whisk until combined.
  3. Add the mayonnaise: Add the mayonnaise, and whisk until creamy.
  4. Add the cheese: Add the crumbled blue cheese, and whisk to combine.
  5. Dress the salad: Just before serving, whisk the dressing again. Toss the lettuce with the dressing, and serve.

Notes

Easy way: Whisk all the ingredients together in a small bowl until creamy.

Less cheese: This is a very chunky dressing, the way I like it. Cut back to 1/4 cup of blue cheese if you prefer, and it will still taste great.

This dressing is forgiving - just use decent vinegar and oil, and real mayonnaise (no Miracle Whip, please!).

Use an inexpensive blue cheese, like Danish blue. Save the good stuff for the cheese plate.

My favorite white wine vinegar is from Alessi.

Serve with grill roasted chicken wings.

See my Vinaigrette Basic Technique for an overview of the method.
