Quick pork tacos are my “In case of emergency, break glass” recipe. They’re what I cook when I don’t have time to cook, but we need dinner. Rip open the plastic on a package of Western Pork Ribs, sprinkle them with salt, garlic powder, and chile powder. Toss them in the pot, add a cup of water, dump in a can of Ro*Tel tomatoes, and fire up the Instant Pot. The rest of dinner is “grab out of the refrigerator” taco toppings: tortillas, shredded lettuce, shredded cheese, sour cream, salsa, pickled jalapenos…whatever I can find. If I have the time, I’ll heat up some frozen make-ahead beans in the microwave. And…phew. Crisis averted, another dinner served.
