Instant Pot (Pressure Cooker) Recipes

I am a pressure-cooking evangelist. Pressure cooking with an old-school stovetop PC kept me going when my wife had to go on bed rest for 6 months before our youngest child was born. I was left as Mr. Mom for a 3 year old and 1.5 year old, on top of being DadCooksDinner.

I could take care of two toddlers and still be Dad Cooks Dinner because of my pressure cooker. Pressure cooking let me compress my time in the evenings. Recipes that said "simmer for hours" became "cook on high pressure for minutes" instead. I made dry beans, stews, chilis, and curries between daycare and bedtime, then reheated them the next day for dinner.

After that, pressure cookers were a regular part of my batterie de cuisine. (A French term for the tools and pans used in a kitchen, its literal translation is ", meaning "Kitchen Artillery". The phrase is one of countless things I learned from Julia Child cookbooks.)

I switched to electric pressure cookers when the Instant Pot came out and never looked back. They are a fantastic tool that I still use almost every time I cook.
