Instant Pot (Pressure Cooker) Recipes

I am a pressure-cooking evangelist. Pressure cooking with an old-school stovetop PC kept me going when my wife had to go on bed rest for our youngest.

I could take care of two toddlers and still be Dad Cooks Dinner because pressure cooking let me compress my time in the evenings. Recipes that said "simmer for X hours" became "cook on high pressure for X minutes" instead. I could make dry beans, stews, chilis, and curries between daycare and bedtime.

I switched to electric pressure cookers when the Instant Pot came out and never looked back.
