Cookbook Giveaway!
Pam Anderson was kind enough to send me a copy of Cook Without A Book:Meatless Meals. I already have a copy (see my review here), so we're having a giveaway!
To enter the giveaway, leave a comment (in the giveaway post on my blog) with your favorite meatless meal.
*For me, meatless meals are rice and beans. Cajun red beans and rice, Cuban black beans and rice, Indian lentils and rice...I'm using Pam's book to spread my (vegetarian) wings.

One entry per person, and please make sure there is some way I can get in touch with you through the comment. (In other words...no anonymous comments, unless you identify yourself in the text of the comment.) The comment has to be in this post on DadCooksDinner.com; emails, entries on my Facebook page, retweets, and notes wrapped around bricks and thrown through my window will not be considered for the drawing. Only entries from North America will be accepted.
Entries will be closed at 9PM EST on Sunday, January 15th, and I will randomly select the winner at that point. The winner will be announced Sunday. If I am unable to contact the winner by Wednesday the 18th, I will pick a new winner. Good luck!

I created a vegan version of the old Lousiana standby of red beans and rice, using Morningstar veggie crumbles in place of the meat. It took a couple of tries to get it right; the secret turned out to be to use peanut oil for browning the crumbles and creating the roux, that gave the flavor profile enough body to stand up to the spices.

My favorite vegetarian meal is either pizza (I love me some white pizza with spinach and tomatoes!) or sweet potato burritos (called addictive sweet potato burritos on allrecipes). The pizza is a crowd pleaser (5 kids in the fam and each can top their own) and the burritos are fantastic to make ahead and freeze for a quick meal!

I enjoy cous cous burritos (some ground cumin added to it) with cilantro, cheese, and salsa or for something more time consuming an asparagus (if in season) or mushroom lasagna.

Szechuan Tofu & Green Bean Stir-Fry. This has become a staple in our house. The kids love it and so do my wife and I. I omit the crushed red pepper for them, but then I add sriracha to my own bowl. I serve it with short grain brown rice.

I clearly need help as a meatless night in my house usually consists of plain pasta. Love to change that though.

I love Korean Bibimbap- rice, a medley of carefully seasoned vegetables, Korean red pepper paste, all topped with a fried egg. A fried egg never makes me miss the meat in a meal.

I like soups and recently we had Italian tortellini soup. It has Italian seasoning, fresh tomatoes, zucchini, squash, canned diced tomatoes, celery, carrots, garlic, onion, kale, and of course cheese filled tortellini. It's a recipe that I proudly came up with on my own in an attempt to get more veggies in my husband & toddler. They both loved it. 🙂

While my family's favorite is grilled cheese with tomato soup (made with water for hubby, with milk for daughters), my favorite is shrimp creole (sans shrimp, of course). The crunchy veggies with the spicy sauce is so yummy... Just thinking about it makes my mouth water.... I do make it with shrimp as well, but I can eat it without the shrimp too.

Recently I have used spaghetti squash as a pasta alternative great with Alfredo sauce, red sauce or spiced up with black beans and salsa. Enjoy your post on Facebook!

Chili rellenos are my favorite meatless meal. Cheese stuffed poblano, fried, and wrapped in a tortilla... Nothing better!!!
