    Processing the hummus

    I’m going to a dinner party this weekend, my contribution is homemade hummus.

    I know it’s easy to buy hummus - my grocery store has a refrigerated case dedicated to all sorts of different hummuses (hummi?). But homemade hummus will make you a hero. It really does taste a lot better than store bought. Preparing hummus from dried beans is simple if you have an Instant Pot and a food processor.

      Do you peel the chickpeas? I've noticed that many recipes suggest that you need to do this to make it creamy.

        I do not. I’ve read the same thing, but didn’t find it worth the effort.

        I peeled them one time, to see if it really made a difference ... and I did not think the difference was worth it. I do think what would make it creamier is to process it for many, many, many minutes. Again, for me personally, not worth it.
