
It's coming! The big brother to my favorite pressure cooker, the 6 quart Instant Pot IP-Duo60, is now available for preorder. (I think I sprained my clicking finger rushing to get my order placed.)

I've been to the link for "pre ordering" the 8qt IP. It's a link to an Amazon listing that states it's currently unavailable, but there is no option to preorder that I can see.

This new PC sounds wonderful,and it addresses some issues that have come up with older cookers (stainless steel inner pot...sweet!). But I'm curious. The timer goes up to 240 minutes - 4 hours. Not being a slow-cooker cooker myself (but considering it), I thought that slow cooker times are generally 6 to 8 hours on a low setting. So it seems that the slow cooker function on this Pot is only for the "high" slow cooker setting. If you reset it after 4 hours, the heat level would probably be too high for a 6- or 8-hour cook. I was wondering how this might impact some recipes that might call specifically for the low setting.

I haven't looked at the details, but I think that means 4 hours pressure cooking. My 6 quart instant pot - which this one looks like it is based on - can do at least 20 hours in slow cook mode.
