Chef JJ Johnson's Pork Suya with Kimchi

The National Pork Board asked me to share this video Pork Suya from Chef JJ Johnson of The Cecil in Harlem. I've never heard of Suya before. It's a West African spice paste, and it looks fantastic. I must try itโ€ฆbut first I have to find bird's eye chili and black garlic.1From the recipe: "Black garlic can be found at some specialty stores but if you'd like, you can substitute it for 3 additional regular garlic cloves. You can also substitute a Thai chili or 2 serrano chilies for the bird's eye chili."
