
My Instant Pot is an important tool in my kitchen. It has a very particular set of skills, and I can make a surprising number of dishes in it. But, sometimes my pressure cooker’s skills are best used as a supporting player. My Instant Pot does a lot of things - but what it does best is be a pot. And not everything is a one-pot meal.
Enchiladas, for example. I use the pressure cooker to make the saucy, shredded brisket filling. Then the real work starts - filling, rolling, and baking the tray of enchiladas in the oven.
