Throwback: Rib Roast for Christmas

What is my tradition for Christmas dinner? Prime rib roast. I want to serve the big roast beast to my guests. This year, my guest list is going to be smaller because [gestures broadly], just the five of us. So, I’m going to cut back and… cook a prime rib roast, just a smaller one.

(And yes, I know I’ve been pressure cooking focused for years now, but that’s not all I cook. On the holidays, the pressure cooker helps me with side dishes.)
