
I’ve got mail! Last week’s throwback post about easy braised oxtail inspired them to write, and tell me the oxtail was fine and all, but the real winner was the pressure cooker mashed potatoes lurking in the background of the picture.
I have to agree. It took me a while to pin down my Instant Pot mashed potato technique, but now I have it dialed in. And, it is simple enough that mashed potatoes went from “just a bit too much work for a weeknight” to “toss baby red potatoes in the Instant Pot and I have a quick side dish.”
