    Programming note: I’m on vacation for most of July, out of town with my family. To keep the blog posts coming, I’m doing Throwback Thursdays, bringing back popular recipes from the archives. (This also forces me to update older the formatting on older recipes. Win-win!)


    Throwback Recipe Link: Rotisserie Chicken with Tex-Mex Rub

    “Did you bring the rotisserie?”

    Darn. I’m out at my family’s cottage on Lake Erie, spending a week with my brothers and sisters, nieces and nephews. I’m unpacking my jumbo 26.5 inch Weber kettle - doesn’t everyone go on vacation with a grill in the trunk? - when my brother’s eyes light up.

    “I’ll get us a rib roast and we can cook it on the rotisserie!”

    Sorry, Pat. I don’t have a rotisserie for this jumbo kettle. I thought the larger cooking surface would be more important than the rotisserie…but obviously, I let the team down.

    In honor of the missing rotisserie, here’s a Throwback Thursday rotisserie chicken recipe, with a quick and easy homemade spice rub.
