
Thanksgiving dinner this year is going to be odd. I’m used to cooking for a crowd, grilling and roasting multiple turkeys with all the fixings. This year it is just me, my wife, and the kids. I’m cutting things down to the essentials, and trying to convince myself not to overcook.
And, according to my blog statistics, I’m not the only one. My Instant Pot Turkey Thighs recipe has been moving up in my “most read” list. If, like me, you love dark meat turkey, it’s a great way to cook a Thanksgiving feast for a few people.
