
When I need a quick side starch for dinner, I pull out my Instant Pot and my favorite potato technique - pressure steaming potatoes.
It’s a simple technique: put the potatoes in a steaming basket, add 1 cup of water to the pot, and pressure cook for 6 minutes. Then, after a quick release, lift the steaming basket out of the pot, dump out the water, add some oil or butter, and sauté the potatoes in the pot to brown them a little and coat them with some seasonings. Easy!
