Throwback Thursday Recipe: Pressure Cooker Cochinita Pibil (Yucatecan pit-cooked pork)

I was having a back and forth with a reader about this recipe. PC Cochinita Pibil one of my old-school pressure cooker recipes, way back before I owned an electric PC, and he wanted to know about the timings. I went through and updated the recipe, and figured, while I’m at it I’ll share it out again.
