
Last week was even more hectic than usual at casa DadCooksDinner. I worked all weekend in my IT day job, moving our data center to Phoenix. Then we spent the work week picking up the pieces; some of the new servers decided that production load was too much, and went on strike.
I spent most of the week saying: “Honey, can you make dinner? I’m stuck on this Zoom call, and I have no idea when I’ll be able to escape. And, please have the kids bring me up a plate.”
Here’s the star of the show from Tuesday, that the family picked up and ran with. It's one of my favorite “simple tacos from the Instant Pot, crisped up in a frypan” recipes. The recipe says it is for tostadas, but it goes great in tacos. It was Taco Tuesday after all…
