My Rancho Gordo Bean Club Box arrived, and…I’m falling behind. I’ve still got beans from my previous box…and the one before that. Time to start using them up!

I made this last night and it was awesome. Great and simple recipe.

I had a bag of RG Alubia Blanch's. I cooked them according to the recipe in my 6 qt IP and they were hard after 25 minutes. I put them back on for another 15 and they still needed 10 minutes more. I've never had RG beans do that before.

In the end, it was worth it. The smoked paprika made all the difference. Getting Spanish Chorizo around here is expensive so next time, I'm gonna hit up a local Portuguese market and get Chouriço or Linguiça.
