
Pressure steamed potatoes snuck up on me, becoming one of my go-to weeknight side dishes. I can steam a bag of new, baby, or fingerling potatoes in my Instant Pot in about 15 minutes - 20 minutes if I take the extra step of browning them in the pot in some butter or oil.
Here’s an example of this technique with flavors from sunny Provence in the south of France.
