Seven hour leg of lamb is a classic French recipe, where the lamb is slow roasted for a long, long, long time. “If you’ve done it right, you can eat the lamb with only a spoon” is how the chef who taught me the recipe described it. Now, not that there’s anything wrong with a 7 hour cooking time, but I can get that done a lot quicker in my pressure cooker.
This recipe is one of my favorites from Australia. When I check my blog stats in the morning, this recipe is always on the top of the list, thanks to the time difference. It is especially popular during the holidays, so I’m bringing it up to remind anyone who’s looking for a holiday roast from the pressure cooker.
