Throwback: Stuffed Peppers

There’s been a surge of interest in my stuffed pepper recipe, so I’m making it my throwback recipe of the week. I love the colors in stuffed peppers. A “rainbow pepper” pack from my local grocery store adds a pop of color to counterbalance the gray skies of winter.

Oh, and they taste pretty good, too. 🙂
