These are amazing looking recipes, but where we live there arenโt any rotisserie chickens anymore. After I got the email from you I planned to try a couple. When I got to the chain grocery store they said due to lack of employees that they did not have the staff to prep and cook them. The warming oven they put the done ones in was gone! So I asked where it was moved and thatโs when I got the bad news. That store is 7 miles a way - round trip 14 miles. The cost of gas to go there is in California gas scalping price is about $6.99 or one gallon. The next closest store in Sprouts Farmers Market and itโs 12 miles away. I shop there every other week. They donโt have rotisserie chickens, they never have, but the do have shredded chicken breasts in clamshell packages in the deli. So I bought one and made the tortilla soup. Hereโs where the lightbulb went on. I also bought a big bargain pricedpackage of skinless boneless breasts which were similar to the ones at Costco in their freezer. I cooked four of them from frozen in my 6 qt IP - I added a cup of my own homemade stock, plus a tablespoon of apple cider vinegar. Cooked high pressure 8 min, natural release so they did not get tough. Then I shredded some, cubed others and froze them. Iโm not big on refreezing foods, but since they were destined for soups I figured it wouldnโt hurt. These soups are great for lunch and dinner.
