Breaking up a rotisserie chicken

I had the in-laws over for a birthday dinner last weekend (happy birthday, Jackie!), and made rotisserie chicken for the crowd.

Now, what should I do with the leftover rotisserie chicken? Make soup in my Instant Pot, of course!

There’s nothing better than homemade chicken broth – especially with your own leftover rotisserie chicken…what’s that? You didn’t grill rotisserie chickens this weekend? (Just me?)

That’s OK – you can pick up a rotisserie chicken from your local grocery store, and it will work just fine.
