This week’s Pork Belly Burnt Ends recipe got me thinking about “barbecue” in the pressure cooker.
I know, I know, it’s not real barbecue, cooked low and slow and smoked to perfection. It is good eats, and a great way to cook tender, fall off the bone ribs. And If I happen to use barbecue rub and barbecue sauce while I’m making them? It might annoy the barbecue purists, but I’m willing to risk it to have a quick rib dinner.
